700ml water

160g polenta

1 tsp salt (optional)

generous grating of black pepper

1/2 tsp each basil and oregano

1 tsp extra virgin olive oil (otional)


What to do

Preheat the oven to 220 °C. Oil two 8 or 9-inch round cake pans and line the bottoms with circles of greaseproof paper.

Bring the salted water to the boil. Slowly add the polenta and remaining ingredients, stir until it thickens. Cook for 2 minutes.

Spread the polenta evenly in the bottom of the two pans. Place the pans in the oven and bake for 12 minutes or unitl golden brown.

Add your favourite toppings and bake.
