Italian Penne Pasta with sundried tomatoes & basil

Prep and cooking time: 30 minutes

Serves 6


For the Sauce:

2tbs Biona organic Extra Virgin Olive oil
1 organic onion peeled and chopped

2 cloves garlic crushed

6 Biona Organic Sundried Tomato halves

1 small organic red pepper deseeded and chopped into small pieces

Handful of organic Kalamata Olives

1 tsp of mixed herbs

1 can Biona Organic Chopped Tomatoes

1tbs Biona Organic Tomato Puree

1 tbs Biona Organic Balsamic Vinegar

1 tbs Biona Organic Agave Syrup

Salt & Pepper (to taste)

For the Pasta:

500g Biona Organic White Spelt Penne

400ml salted water

1 tsp olive oil

1 pinch of salt


To garnish:

Biona organic Montello Cheese

Organic Fresh Basil

Serving suggestion - Biona Organic Pesto



For the sauce:

1.    Add the olive oil to a large saucepan and fry the onion and garlic until golden

2.    Add in the sundried tomatoes, pepper and herbs - sauté for 10 mins

3.    Pour in the chopped tomatoes and tomato puree. Stir until combined. Add in the vinegar and agave syrup.

4.    Season with salt and pepper to taste

5.    Simmer at low temperature for 5-10 mins to allow flavours to combine


For the pasta:

1.    Add the pasta to a pot of boiling water

2.    Add a pinch of salt and a drop of olive oil

3.    Cook for 7-8 minutes

4.    Drain and rinse with cold water then add to the sauce  

Serve with fresh basil and grated Montello cheese and for a more intense basil flavour add a spoon of Biona Organic Pesto on the side.
