Curried Quinoa & Vegetable Pilaf
Ingredients:
2 tbsp Biona Organic Olive Oil
1 onion, chopped
2 tbsp Biona Organic Thai-Style Curry Paste
1 tsp Biona Organic Chilli Paste (optional)
300g BiOFAIR Organic Quinoa Grain/ BiOFAIR Organic Quinoa Tricolore Grain
1 carrot, diced
1 x 400ml Biona Organic Coconut Milk
400ml vegetable stock
1 courgette, finely chopped
55g French beans, cut into short lengths
55g Garden peas
Preparation:
Heat the oil in a large saucepan. Add the onion and stir for 3 minutes until golden. Stir in the curry paste and cook for 30 seconds.
Stir in the quinoa so that it is coated in the oil and curry paste. Add the carrot, coconut milk and vegetable stock. Season. Bring to a light boil, reduce heat, stir, cover and simmer gently for 10-12minutes.
Add remaining vegetables, cover and cook for a further 8 minutes or until most of the liquid has been absorbed.
Taste, season and fluff with a fork before serving.
Tip 1: Sprinkle flaked almonds or coriander leaves on top as a garnish.
