Quinoa Tabouli

Unlike traditional Tabouli this recipe uses Quinoa instead of Bulgar wheat.
Quinoa is more nutritious and is also Glutenfree

1 cup Biofair Quinoa (rinse)
Bring to boil in 2 cups of water. simmer, covered until water is absorbed

3 medium tomatoes diced
½ cucumber diced
1 bunch green onions or chives chopped
2 carrots finely diced
¼ cup Biona Extra Virgin Italian Olive oil
1/8 cup of Biona Cider vinegar
juice of 1 lemon
½ cup of fresh parsley finely chopped
½ cup fresh coriander finely chopped
some fresh mint finely chopped
salt to taste

Combine all these ingredients and add the Quinoa when cool.

Serve chilled
